MKS Knife produces hand-crafted professional culinary and utility knives from a studio at 84 Rice Street in Cambridge, Massachusetts. The company was established in 1998 by Adam Simha as MKS Design, initially as a furniture and homewares fabrication practice, before expanding into knife production in 2005 with the launch of the Bicycle handle knife project. After earlier production runs in Sheffield, England, and Maniago, Italy, blade manufacturing returned to Massachusetts, where blanks are now cut from Sandvik 13C26 stainless steel and final assembly is performed by Simha in Cambridge. Simha’s distinctive designs, characterized by the Bicycle handle aesthetic, have been adopted by professional chefs and cooking enthusiasts worldwide.
